US#1. Long tapered root vegetable with lighter, golden-coloured skin and white flesh. The middle ground between an orange sweet potato and a russet. It has a slightly more crumbly and dry texture than the orange variety with a mild, nutty flavour. They make excellent alternatives to standard Irish potatoes. Perfect in casseroles and side dishes, or simply baked, and can be a nice change of pace in recipes that traditionally call for white potatoes.
